So it’s customary in my household while growing up in Jamaica that Saturday’s meal would be soup. The soup ranges from:
- Chicken Foot Soup
- Beef Soup
- Peas Soup
- Crowfoot Soup
- Red peas or Gungo Soup
- Fish Tea
- Mannish Water
I remember traveling to other places on the island like Portland and got Busu (a snail like creature in a black miniature shell). Which I was tasked by my father to make soup. On another occasion, we would spend summer days on Hellshire Beach and would pick up wilks along the seashore and then again I was tasked to make soup.
Why did I always have the cooking responsibilities? It did not dawn on me that it was preparing me for a future in culinary. Cooking at home and also being professionally taught, in addition to professional experience allows me to be competent in culinary arts.
I share with you my soup:

Enjoy!
